Fun with Vinegar

I’ve been reading a lot on how important vinegar is for… well, everything. Everything you ask? YES! EVERYTHING! I always knew it was important for my favorite filipino food recipe, chicken adobo. I also enjoy the balsamic variety on fresh mozzarella and beefsteak tomatoes. When I was in China last year, I noticed that vinegar replaced Soy Sauce on the tables of most of the restaurants we went to. In one region of China, they were particularly proud of their vinegar. People everywhere really love vinegar.
For the past week, I’ve been testing it in various ways. Today I found a website that gives me more information on vinegar than I can even use at the moment. Here’s a link to The Vinegar Institute. Just to give you a heads up, it includes vinegar usage in health, household cleaning, laundry, gardens, sweets and even food.
